Vegetable Soup for the Soul

Taking time out has its advantages…..and disadvantages.

I’m so fortunate. I rarely get ill. But the energy lately has Bombed.

Sick and drained.

Time for the tried and tested Vegetable Soup. No. I’m not Vegetarian but this is my stand-by.

It never fails :o)

A Do Whatever You Need to Do to Feel Better Recipe.

Essential Ingredients:

Extra Virgin Olive Oil

Onion

Garlic

Tinned Plum Tomatoes

Garlic Pepper (if you have it)

Salt

Carrots

Potatoes

V8 Juice

Veg Stock of your choice.

Anything else you have to hand. Red Pepper, neeps, cabbage etc

 

The Creation:

Fry as much onion and garlic as you want in some olive oil and some garlic pepper.

Chuck in the veg. (Carrots and potatoes are excellent but add whatever you want/have.)

Jiggle the pan about a bit in an artistic way.

Add tomatoes – as many tins as you like.

Artistically pour in the stock and the V8. A lot or a little. Whatever.

Stir. Taste. Add salt if you want.

Smile.

Simmer for however long you have. An hour is good.

(I have a Rayburn and put the pot in for 2 or 3 or 4 hours. Me’h)

Eat.Sleep. Tomorrow you will be feeling great.
