Soda Bread

Having lived in Ireland twice, we have a penchant for soda bread here. Good old peasant food.

And the easiest bread to make. Just 4 ingredients.

Flour. Bicarbonate of Soda. Salt. Buttermilk.

Buttermilk? Not a staple here so I use ordinary semi-skilled milk and squeeze half a lemon in.

The whole secret to this bread is the alkaline soda and the acid milk.

Throw it all in a bowl. Swirly mixing. Floured table. Gentle moulding (NO Kneading required) A bit of proving to help the bicarb do its thing and cook. Voila.

Works for me.

This is quite dense and heavy but perfect for soups or stews and the like. Tho’ some weirdos hereabouts like it with just honey. Eeee yooo!
