RISSOLES

I blame either the TV or their mother (!!) but – every time I cook this and am asked “What’s for tea, Mum?” and answer Rissoles. I get the same response from my sons.

“What did you just call me?”

Sigh.

Anyway. This is MY late mother’s recipe, with a few tweaks.

Mashed potato (I bought 2 bags of frozen mash from Co-op. £1 a bag #lazy)

A tin of corned beef.

Spring onions.

Salt and pepper (and my fave, garlic pepper.)

Flour for dusting (with – see brackets above)

Bash all together (apart from flour) in a big bowl.

Take out a small handful and shape into a ball. Roll it in the flour times however many times.

Heat a frying pan with oil/lard/dripping and fry on a low heat (as you squish them gently flat) until hot all the way though and crispy on the outside.

Serve with……….today it was curried beans.
