Deep Breath : Keep Calm & Cook Risotto!

WHEN did this turn into the cooking channel???

Anyways.

I’m a teensy bit stressed today so I’ve gone back to cooking. OMD – I’m soooo in love with Risotto :o)

GB on How Not To Cook Asparagus and Mushroom Risotto if you like following recipes.

Start early by boiling a kettle and filling a jug with the hot water and some chicken stock cubes (2) and the raw asparagus. Set aside.

Fry off some chestnut mushrooms (or mushrooms of choice) and set aside.

Later :

Get a saucepan. Chuck a good glug of Extra Virgin Olive Oil in with a generous sprinkling of garlic pepper.

Heat gently for a couple of minutes to break down the rice and coat it in goodness.

Add a ladle of chicken stock and keep gently heating. And stirring.

When the stock disappears, add another ladleful.

Repeat the above adding/stirring as many times as needed. Very soothing and calming.

When the Arborio is lovely and creamy and melty, add the asparagus (and if needed – more stock)

Sprinkle (heavily) with grated parmesan cheese.

Add mushrooms (to warm them through.)

Taste. Then salt/pepper as necessary.

Half an hour to two hours later (depending on just how stressed you are and how much calming you need)- grate some nutmeg on top. Put the lid on and let it steam for a while.

I set it on the top of the Aga to keep warm.
