Chicken Pie and Grated Raw Potato

Bear with me.

My chicken pie starts with onions, carrots, potatoes, chicken stock, garlic pepper, salt and tarragon. Oh. And Chicken.

Shove in the Aga for a couple of hours to cook and blend the flavours.

Hang on – Big Mistake. WATERY. SLOPPY – Too much chicken stock and no cornflour or gravy granules etc. PANIC (?)

Nope. A Wise Woman once taught me how to thicken stock by grating a raw potato…with skin…stirring it into your stock, and watching the magic happen.
