IRISH SODA BREAD : Simples

I’ve done this before but it’s worth repeating.

Along with chapati, Soda Bread is one of the quickest, simplest food staples EVER.

I made some today and had the usual snooze you lose moment. Bloody Gannets. Sigh.

One loves it with honey. One with baked beans and fried eggs. Two of us LOVE it with spreadable cheese.

I used to watch Darina daily in Ulster. This is a bit long winded but…Flour, Salt, Bicarb, Buttermilk are all you need.

I don’t have the money to pay extra for real Buttermilk. I just use everyday Semi-Skilled…Skimmed milk and squeeze fresh lemon juice in. Leave it a while (half an hour or so) and goes lovely and gloopy.

This bread is thick and hearty (hated by the stay skinny/skeletal fascists) and the perfect of perfects for wiping up the dregs of a winter stew/soup after a hard day’s graft.
