Frittata Anita : GB Version

Anita, the Gibraltarian, taught me how to cook this dish.

In the RMP office kitchen one day after I’d badgered her for the recipe.

So. To me, it has always been a Spanish Dish – Not Italian or Italianish.

Anyhoo…I’m drowning in our friends’ surplus chicken eggs and I have some cooked potatoes, a red onion, some frozen peas and grated cheddar and mozzarella left over from yesterday. Chorizo is the only thing I bought.

I can’t really call this one a proper Frittata Anita then! Shrug. It’ll be good :o)
