Butternut Squash Soup

I did not bother to watch the whole of the video below.

WHY?

Because I make it quite often. Completely differently. And it’s FAVE here. Light and hearty (?)

Peel and dice butternut squash, onion, garlic, red pepper, potatoes…carrots if you like…and

Sweat off the veg in olive oil.

Add veg stock or (as I do) chicken stock. Add seasoning to taste aka salt, garlic pepper and freshly grounded pepper.

Bring to the boil and simmer – like – forever. Whilst you check your FB/yt likes….Or until everything is tender.

Transfer the big cooking pot to the sink (it catches the splashes) and get your whizzy thing out. I just call it the whizzer. Image above.

Annoy everyone around you with the whizzer noise as you crush everything into a smooth as silk soup.

Replace pot on a low heat to warm through as you cook bacon and/or croutons

Ladle out. Top with crispy bacon and/or croutons and cream. Or Crème Fraiche. Or nothing
