GB : BS Soup

The only thing that grew rampant in my veg patch were squash.

I prefer Butternut Squash but all work here.

Recipe :

Big pan. Extra Virgin Olive Oil. Onion, diced. Garlic clove, bashed. Red pepper sliced and diced. Diced squash. Fry all gently with some garlic pepper until…….

Add good quality veg/chicken stock. Throw in a few potatoes/carrots/celery.

Simmer for ages on a VERY low heat until all is cooked.

Get out your lazy arse but brill handheld blender.

Blend the feck outta all the above when all the above is cool enough not to blast you with hot splashes.

Leave until needed.

Reheat very calmly and garnish with….?

We usually have stale bread croutons and even more pepper and salt and bruschetta on the side. And Maybe some cream.
