Every year I stock up on far too many vegetables for Christmas.
Every year I’m told that I’m NOT feeding SE Asia for the day.
Every year – by New Year’s Day – I look at all the left over veg and smile.
Every year – on Jan1st – I find myself cooking a homemade vegetable soup. YUM :o)
I’ve not made my own chicken stock for a long time. The carcass goes into the garden because we have cold and starving wild animals to feed.
Today I had ….tons of carrots and onions and potatoes. A tin of plum tomatoes. Chicken stock cubes. Garlic Pepper. Salt. And a sneaky tin of pulses/beans hiding in the pantry.
It’s now been simmering for 3 hours. I’ll give another 2 hours. Cut some bread. Slather said bread with SALTED BUTTER and enjoy my January the 1st 2021 tea.
