Soup of The Day

I make this soup for myself whenever I feel bloodless and exhausted.

It has no name but the basics never change.

Fry diced onion and sliced garlic in olive oil and garlic pepper for a while. Chuck in some sliced/diced carrots and potatoes. Mix and fry. Mix and fry. Add chicken stock and a tin of tomatoes.

Simmer for however long.

The additions are dictated by what’s to hand. Today it’s fresh thyme, a dash of paprika, a sprinkle of cayenne, some dried macaroni.

Topped off with crispy bacon and some grated cheese.

Ooops. I forgot to mention the lentils.

LENTILS!

They always remind me of Neil, the hippy from the Young Ones :o)
