Chicken Soup for the Soul

When I get really morose – I cook.

After alienating about half the family yesterday by hinting that they may be under the control of The Thought Police. And that not Every Single person in Wales has their own personal watcher who’ll jump out of the bushes and fine them £1,000 for crossing the border to England. I felt very sad :o(

So I searched for a chicken soup recipe and adapted this one from Simply Sated.

Get a couple of leeks, chop and fry lightly in butter.

Add a clove or several of garlic, chopped carrots (lots) and chopped potato (not so many lots…)

…Lots of garlic pepper, freshly ground black pepper and some salt.

Add some good Chicken stock and simmer (or fling in the Aga for an hour) until veggies are almost cooked.

Add diced/shredded/cooked chicken breast.

Heat through.

Meanwhile : get a small tub of creme fraiche. Stir in a GOOD dollop of Dijon mustard, herbs of choice (I used Tarragon) and bash about until blended.

Cool cooked soup for a few minutes and put about a quarter of it into another bowl.

Blend until thick and creamy, then return it to the pot along with the Creme Fraiche mixture. Stir, whisk until nice and creamy.

Return to the oven for another hour.

Serve with freshly baked bread and salted Irish Butter.
